Abstract

Food allergies and food intolerances are often a significant problem in catering, not only at home, but also in a preschool. In order to study the prevalence of food allergies and food intolerances among preschoolers, the medical documents of children (form 026у) were analyzed and a survey of their parents was conducted. The sample included 3195 children attending children's educational institutions of the Krasnoselsky district of St. Petersburg. We found that 9,8% of preschool children had various allergic reactions. Food hypersensitivity detected in whole cow's milk in 5,3%; dairy products in 2,7%; chicken egg in 3,4%; 2,9% chicken; fish and seafood in 3,2% of children. Allergic reactions to obligate allergens (citrus fruits, chocolate, cocoa) were observed in 2,3% of children. The presence of intolerance to a number of products is a frequent reason for the restriction in the nutrition of children in a children's educational institution. The task of the staff of the institution is the task of forming the replacement of eliminated products with the maximum possible approximation to the age physiological norm.
